3 tasty Paleo recipes

3 tasty Paleo recipes that are grain free, low carb, gluten free, and delicious! Each of these recipes keeps within the guidelines for Paleo recipes, using fresh, high-quality ingredients in unique ways that will make your mouth water just reading about them. 

 

ZUCCHINI “PASTA”

Serves: 3

Ingredients:
3 Zucchini or Summer Squash (6-8″ long in size)
2 Tablespoons of Extra Virgin Olive Oil
½ teaspoon of salt
½ teaspoon of lemon peel
1-2 Tablespoons of freshly chopped basil

Optional toppings: Pasta sauce, Parmesan cheese, fresh basil, and/or fresh tomatoes.

Instructions:

  • Scrub zucchini. Remove ends and thinly slice into “spaghetti like” strips. (Discard core and seeds since they do not sauté well)
  • In a skillet on medium-high heat add 1 tablespoon of oil. Once heated, add half your zucchini noodles. You will need to cook them in two batches
  • Add ¼ teaspoon of salt and ¼ teaspoon of lemon peel. Toss and cook for 3-4 minutes.
  • Half way through, add half of your allotted freshly chopped basil (approximately ½ – 1 Tablespoon worth) and finish cooking until noodles are soft
  • Repeat with second batch of noodles
  • Serve immediately with favorite pasta sauce, topped with Parmesan, fresh basil, and/or fresh tomatoes

 

5-MINUTE FRENCH FRIES
Serves: 1

Super easy fries made of raw Jicama (a tuberous root that’s very tasty)

Ingredients:
1 jicama, skin removed and sliced into thin strips
1 teaspoon extra-virgin olive oil
1 teaspoon paprika
½ teaspoon onion powder
pinch of salt
pinch of black pepper

Instructions:

  • Toss all ingredients together in a large bowl until fries are well coated
  • Bake at 400° for 25 minutes, rotating halfway through

Notes:
For a spicier option add ½ teaspoon cayenne pepper

 

ALMOND FLAX BREAD

The flax seed helps to improve the breads texture and improves its color and consistency.

Makes 1 loaf

Ingredients:
1 ½ cups blanched almond flour
¼ cup ground flax seeds
1 tbsp. whole flax seeds
½ tsp. unrefined sea salt
½ tsp. baking soda
4 eggs beaten
2 tsp. honey (optional)
½ tsp. raw cider vinegar
butter, to grease a loaf pan

Instructions:

  • Preheat the oven to 300°
  • Grease loaf pan
  • Mix all ingredients together until thoroughly combined. Pour into a greased standard sized loaf pan and bake at 300° for 45 minutes, or until a toothpick inserted into the bread’s center comes out clean

Cool completely before serving
